Green Sauce Pasta: The Green Sauce Pasta is a healthy combo of pasta, leafy greens like spinach, and herbs together. Thus making this recipe full of nutrients and proteins.
INGREDIENTS
- pasta (fusilli pasta)
- spinach
- green peas
- onion
- oregano
- fresh basil
- olive oil
- sliced garlic
- red pepper flakes
- grated cheese
- 1-2 tbsp fresh lemon juice
- Fresh coriander
- Salt
- Pepper
PREPARATION
- Boil water in a large pot with salt added to it.
- Add spinach and basil to boiling water and cook for a few minutes. Quickly transfer it to the cold water in another container. Set aside.
- Add the pasta to the boiling water. Also, add some olive oil to avoid sticking of pasta.
- Drain the pasta, and hold some pasta water for further use. Shift pasta to a container.
- Heat olive oil in a pan over medium heat. Add sliced garlic, onion, half the peas, and red pepper flakes. Stir occasionally.
- Transfer this over the cooked pasta.
Prepare Green Sauce
- Heat another pan, add some butter, and remaining peas, and saute.
- Now add boiled spinach and cook. Add cheese, oregano, and garlic. Saute and mix well.
- Moreover add some lemon juice, salt, and pepper, and let it cool down.
- Add the cooked spinach and basil, olive oil, to a blender to make the green sauce. Blend until it looks completely smooth and thick liquid.
- Then pour the ready green sauce over the pasta and add a few tablespoons of the pasta water. Mix well so that each noodle is evenly coated.
- Serve hot with shredded cheese.
