Harissa Sandwich: Harissa is a North African red chile sauce made of easy components including chiles, garlic, olive oil, citrus, and a few warm spices. They are dried, toasted chiles that are dipped and mixed with a couple of spices. This sandwich is topped with harissa sauce and veggies loaded with cheese.
INGREDIENTS
- 5-6 dried chiles
- Salt
- 1 tablespoon ground coriander
- 2 teaspoons cumin
- 1 garlic clove
- 2 tablespoons olive oil
- Bread
- Cheese slices
METHOD
- Toast chiles in a frying pan over medium heat for 1-2 minutes.
- Shift to a bowl and add boiling water. Soak chilies for 30 minutes until soft.
- Drain the chiles, keeping aside the soaking liquid.
- Move the chiles to the jar of a food processor and add salt to taste, coriander, cumin, and garlic.
- Blend until a smooth or slightly thick paste forms, add a few teaspoons of soaking liquid if needed.
- In a small pan, add the olive oil and cook the blended paste, mix for 2 minutes.
- Turn off the heat.
- Set up the sandwiches by spreading slices of bread with the prepared harissa spread, then topping with slices of cheese each and covering the bread slices.
- Drizzle the grill with oil, then put sandwiches and drizzle the top lightly with olive oil.
- Cook until toasted and serve hot.
