Pizza Ai Funghi: This type of Italian pizza is particularly topped with roasted mushrooms in addition to tomatoes, parsley, mozzarella cheese, and fresh herbs.
INGREDIENTS
- 200-250 g sliced mushrooms
- 2 Tbsp fresh chopped parsley
- basil
- 1 minced garlic clove
- salt
- freshly ground black pepper
- 4-5 Tbsp olive oil
- 2 tbsp tomato puree
- 1 tsp dried oregano
- pinch of sugar
- pinch of salt
- Some mozzarella cheese
PREPARATION
- Place a pizza baking sheet in the oven and preheat to 450 F.
- Clean and chop mushrooms into a smaller size.
- Heat 4 Tbsp olive oil in a non-stick pan and sauté mushrooms for a few minutes over high heat until they start to color.
- Add garlic, parsley, salt, and freshly ground black pepper.
- Continue to sauté until the mushrooms turn golden and most of the liquid has dry up.
- Use paper towels to remove excess oil from mushrooms.
- Flavor the puree with a pinch of salt, a pinch of sugar, dried oregano, and extra virgin olive oil, and shred the mozzarella over it.
- Take the ready pizza base or rolled-out pizza dough.
- Spread out the tomato puree on the base.
- Add mushrooms and toppings in a layer.
- Spread mozzarella cheese evenly.
- Transfer pizza to the preheated oven.
- Bake for 12 – 15 minutes or until golden brown.
- Cut slices and serve immediately after baking.
